Who says vegetarian/vegan is boring!

Mashed tofu
Firm tofu, washed, drained and pat dry
Smashed the tofu with a fork, or just squished it you bare hands.
Add a little oil in a pan. Add in the mashed tofu and stir fry it until warm. Season to taste with salt and pepper. You can add a little sprinkle of turmeric powder if you like them to turn out yellow like the real thing. Sprinkle some spring onions over it and serve.

Stir fry greens
Cut up any greens you have. I used cabbage and french beans.
Heat up the pan with a little oil. Add in the vegetables when pan is hot. You can add some minced garlic if you like.
Stir fry it, season to taste. Serve hot.

Olive fried rice
I used left-over brown rice from my previous meal. You can use any rice you fancy.
Heat up the pan. Add a few spoons of bottled olive vegetable, bare in mind that it is salty.
When the vegetables is sizzling, add in the rice.
Fry until the rice look dry or is popping.
Serve hot.

It has been a year since MooMoo’s passing. How time flies when one’s not with you. We still talk about him like he is around, of his funny habits and things he would do.

You filled my life with joy and laughter, 
and showed me what’s unconditional love.
You are my best friend,
the finest I ever had. 
Memories of you are etched in my mind, 
like a fossil that stood the test of time.

Two pieces of firm tofu, mashed.

Throw everything into a bowl. I added some chopped coriander and dried thyme for more flavour, oatmeal to bind the ingredient together, salt and pepper to taste.

Mixed them together and formed into patties like this. Be sure to smack the ball of patty through and fro your palms to compact them so that it will stay in shape during the cooking process. Just don’t throw it right onto the floor.

Fry the patty and serve them between a burger bun. C grilled some aubergines and dressed then in a balsamic dressing. It was a great match for the patties!

An old woman lived in a village. She had gathered a serving of beans and wanted to cook them, so she prepared a fire in her fireplace. To make it burn faster she lit it with a handful of straw. While she was pouring the beans into the pot, one of them fell unnoticed to the floor, coming to rest next to a piece of straw. Soon afterward, a glowing coal jumped out of the fireplace and landed next to them.

The bean thanked him most kindly. However, because he had used a black thread, since that time, all beans have had a black seam.

When visiting places of religion, always bear in mind to be respectful. It’s a home after all, of a higher being. Just like anyone’s home, one should be respectful of it.

Here are some facts I have learnt of these churches:

Cathedral of the Good Shepherd is the oldest catholic church in Singapore. Built in the 1830s by the French missionary, it was later relocated to this current site in the 1970s.

This church has been gazetted as a national monument.

Looking at her current facade, it reminds me of Frankenstein.

Church of Saints Peter and Paul is also known as the oldest chinese catholic church. The building of the church was contributed mainly by the chinese catholic community in Singapore, it also serves as a congregation for different Chinese dialect groups and later as a “language centre” for European missionaries who needed to learn the local dialects. If you look closely, you will notice some chinese features in this old building that needs a restoration too.

The last church we went is the Saint Joseph’s Church. I remember Saint Anthony Girls’ School used to be in the compound. This was built by the Portuguese missionary. You can find more on her history here.

Churches is a place of serenity, and their beautiful stained glass windows never fail to awe me. Most of these here were commissioned by her parishioners.

This was commissioned by a man in memory of his wife and children who had perished in the sea. Noticed the ship above the Saint's head.

The next time when you are bored with no idea on what to do on this little island, take a walk into these old churches and discover the beautiful history within the walls.

Recipe for pizza dough can be found easily when you do a search. I used this. Remember to oil your pizza base with olive oil so that it will not stick, and poke it with a fork. Omit any meat toppings and voilà, you have yourself a lovely vegetarian pizza.

With these basics done, you are just a short wait away to that yummy hot personal pizza!

When it comes to cooking at home, naturally it is a no brainer. But it was my grocery shopping that posed a hitch. I have been so used to buying meat. It seems like a second nature to throw in some bacons, ham or sausages, a chicken or two, or that fresh looking piece of bloody steak into my cart. When the cart does not have any meat in sight, it feels like the main course is missing. It took me a while to get over this, now it does not seem to bother me anymore. After all, it was just a habit I had to break.

I am learning and try to include more vegetables into my diet. I hope to omit all animal products eventually. My goal is to be a vegan, and I am going easy on myself for a start. I still eat meat when I feel like it, at the same time reading up and researching on the subject from many perspectives. There are many reasons why a person choose to be a vegan or vegetarian. While I am searching for mine, I hope you too choose to eat a meatless meal. Well, for at least once a week to start with.

If you are lazy, there is always the ready-mades from the supermarket. I believe in homemade goodness because I know and have total control of what I am putting into my body. It’s not intimidating, try your hands at it. Here is a video from The Wong List. His recipe uses alkaline water, and because I can’t get my hands on any, my recipe omitted it. Nevertheless, it still taste great!

How to know if the mixture is ready besides looking at the colour? Taste it! It shouldn't be floury. Keep tasting and you'll know.

Here is C’s super spicy kangkong belachan to whet your appetite!

Ingredients are kangkong, dried shrimps, chilli, belachan, shallot and garlic.

Soak the dried shrimps in water until soft.
Drain, put in food processor (or you can pound them manually with a pestle and mortal), add in a cube of belachan (toasted), few cloves of shallots and garlic, and chilli. You can use the normal chilli, dried chilli or bird eye chilli to light up the fire! Process into a paste.
Heat up some oil in wok. Put in the paste and fry until your eye water and nose running.
Add in the kankong, stir it around until vegetable are cooked.
Serve hot.

*zi char is a general term for food served by stalls in hawker centre or kopitiam in Chinese style cooking found in restaurants. e.g. sweet sour pork, yam basket, chilli crabs, etc.
In Hokkien, zi mean cook and char mean fry. Together it literally means cook-fry. There is no limit as long as the ingredient is available, and your request is taken.
